Chicken Piccata with Domaine Montel Chardonnay Wine
2 tbsp flour
½ tsp salt
¼ tsp pepper
4 skinless boneless chicken
breasts (I like cutlets the best)
half a lemon (or ½ cup fresh
lemon juice)
½ dry white wine (we suggest
Domaine Montel Chardonnay)
1/4 cup chicken broth
1 tbsp olive oil
2 cloves fresh garlic
(minced)
½ pound fresh mushrooms (or
one can of sliced)
4 tsp capers (if you don’t
like capers just substitute some white finely chopped onions)
2 tbsp of fresh chopped
parsley (or dried if that is what you have)
Combine the flour, pepper and
salt in a bowl lightly cover the chicken with the flour mixture. Keep the remaining flour and combine lemon
juice, wine, broth and whisk until it is mostly smooth. (if you like you can add more wine and less
broth). In a skillet heat the oil and
then add the chicken cooking each side for about 2 minutes each. Then add the garlic, mushrooms, capers or
onions if you are using them. Add the
lemon juice mixture into the pan. Bring
to a boil for about 5 minutes, make sure the chicken is cooked thoroughly. If you need more liquid feel free to add more
wine and lemon juice. Sprinkle parsley
at the end. I like to serve this over
spaghetti (garlic and olive oil flavoring is superior!). You can also serve with orzo. Whatever suits you!
